We are turning into potatoes

I am going through a baked potato stage. I shove about 8 in the oven at a time, then microwave them throughout the week for my Elf and I. The only thing is, I am getting bored with the fillings which are:
- cheese (any variety, preferably strong and honking)
- tuna mayonnaise
- spinach with a poached egg on top! (this I really recommend, but I have overdone it now.)
Anyone?
Also..I have a pumpkin on the windowsill that is giving me guilty stares and will be on the turn soon. What do you do with pumpkins (in the eating, rather than decorative sense)? In fact, pumpkins seem to be everywhere I turn, which is annoying as it reminds me of this gap in my competency.

u could boil the pumpkin and then mash it for your elf.. or slice it really thin, season it and fry it. Thats yummy!!

Bung some chopped up veggies drizzled with/drowned in olive oil in the oven with the tatties and you'll nave yummy roasted veggies as a topping. Pumpkin makes excellent soup when combined with pots, carrots, onion and anything else you fancy chucking in. Also nice stewed with tomatoes and chick peas (it's one of the few veggies we get here, we eat quite a lot!)

1. chopped broccoli with cheese
2. baked beans
3. chicken salad (I guess you'd call it chicken mayonnaise?)

Pumkins? After removing all the stringy bits, roast the seeds (a bit of oil and salt, 180°C oven, stirring often until crisp and light brown) and then make pumpkin pie with the rest! I'll be posting a recipe soon because Canadian Thanksgiving is coming up on Monday. You can also use the cooked,pureed pumpkin flesh in muffins and tea breads. Nice with a few gingerbread spices.

A mixture of:

- creme fraiche or sour cream (whatever you prefer)
- Mushrooms (fried in olive oil and a little butter)
- LoTS of chopped FRESH chives
- Some freshly ground black pepper, to taste.

Brilliant Delia recipe for pumpkin soup. Works just as well with frozen sweetcorn. http://www.deliaonline.com/recipes/pumpkin-soup-with-toasted-sweetcorn,1361,RC.html
Cheese and coleslaw is good on baked potatoes (do the swiss have coleslaw?); also scoop the flesh out of the potato shell, mash it up with smoked mackerel and a bit od mustard and some spring onions. Yum.

- pumpkin soup (onions, garlic, potato, pumpkin etc), eiher normal with sour cream or yoghurt, or asian-style-ish with coconut milk and coriander...

- pumpkin scones!

- roasted, accompanying a chook or some such

- red or green curry is good (jars of ok paste available from Migros!)

You can also make nice pumpkin risotto.

I put salsa on baked potatoes, or tinned ravioli. Carbs plus carbs! It's so healthy!
