What French animals say*
Cows: "Meuh!"
Chickens: "Cot! Cot! Cot!"
Sheep: "Bee! Bee!"
Ducks: "Coin! Coin!"
Pigs (my personal favourite): "Grr! Grr!"

Couldn't find cockerels, sadly. In German they go "Kikerikiii!"
